Sorry about that. I'd changed a few fields and not updated my form, so I was trying to submit incorrect data to other fields. I got this working exactly like you described, though I didn't use the helper field just did the concatenation in the submit rule and works perfectly.

You need to set a formatting rule on the field, the condition would be if the date field is not blank->disable the control. I am attaching a sample template DateFieldFormatting.xsn.
