If it were a regular InfoPath form, I'd guess that the field wasn't a main data source field - sometimes I see people expect IP to save data in secondary data sources. But since it is in a task form, it sounds like you've taken the right steps here.

I have created a form to be completed by field engineers then once submitted it would be check by account managers to be sent to the customer. I would like to be able to send these forms as PDF's to the customer however when I export to PDF it seems to lose the conditional formatting that I have set up in the form.

I don't have the correct access to do that type of query through our servers ( I work for a very large organisation of approx. 40,000 employees) so this sever access is near impossible to obtain.
