Instead of saving you want to setup a submit data connection.
This way you can set the filename and location of where the XML is saved every time. Then add a submit button if you want. You can turn off save completely in the form options.

You obviously have the submit dataconnection for saving the form in SharePoint.
You would need to create another that was identical except it adds the History folder.
The you would setup the two data connections specified by Agni in his post on deleting. You can do it without code too.
In your case you would need to set the name for each file ...

I think you would have two steps to this.
First would be a special submit which would place the file in the histroy folder.

If you want internet users, users external to your network, to update form information then you would need browser based forms on a server that was accessible over the internet. Or they would need InfoPath to edit the forms. With non-outlook clients, they can view forms in the mail but would need to open the attachment, update the form, ...

You would need to add a rule to your submit that has an action to set the value of those fields. This will then trigger when submitted and populate the field values with now() or today()

Outlook is the default for mailing a form from InfoPath. However with the Database Accelerator there is a way to email forms ...

Have you looked at field formating? With an expression or field you can set the way a date is displayed and the month in text is one of the options.
You can create a field which is a date and time field, set the default as Now() and then set the formatiing so that is displays the way you want without a formula and doing it manually.
