How about....
str = str.replace( ''<eigene buro>'', ''&_lt;eigene buro&_gt;'' );

I don't understand; why are you using InfoPath to edit XML?

You can do this without using code.
1) Double-click on your Submit button (make sure that you have chosen ''Submit'' instead of ''Rules or custom code'' from the action drop down)
2) click on ''Define Action parameters...''
3) Choose ''Enable Submit commands and buttons'' from the two radio buttons
4) Click the ''Add...'' button
5) In the To: ...

You could just use a repeating section and delete the first section that InfoPath automatically puts in using code in the onLoad() method.
var parent = XDocument.DOM.selectSingleNode( ''//my:ContainingGroup'' );
parent.removeChild( parent.selectSingleNode( ''my:repeatingSection'') );

I'm not sure I understand your question. If you have a ddl that you want to hide when the user selects other, just use conditional formatting to hide it when it equals ''other''...
Are you wanting to elimate Other from the drop down list when someone chooses it or something? If you're doing that then, why is it in the list at all? If you're ...

With a repeating table of varying size this would be very hard to do with rules (if not impossible). The code would be really easy, check this out:
function getEmails()
{
var list = XDocument.DOM.selectNodes( ''//my:repeatingTable/my:email'' );
var str = '''';
while( node = list.nextNode() )
{
str += node.text + ''; '';
}
return ...

You probably want to use a rich text box if your translating to Word. If you must use a regular textbox I would suggest having a hidden rich text box that you copy the content from the regular textbox into. Then, transform using the rich text box, not the regular. This way you can translate formating characters (such as line breaks) from ...

With a button it's easy but without? Is it possible?
I'm not sure I understand your question. If it's easy to do with a button, can't you just put the code/rules that you used to do it with a button somewhere else - like in an onAfterChange event? Sorry if I'm misunderstanding.

I must be oversimplifying this... Use a regular section (instead of repeating) or even no section at all and put three textboxes beside the three fruits. The textboxes will default to zero and the user can change each one (data validation would be num >= 0). If you play around with the way the textboxes look you could get them to look however ...

I know this isn't quite what you're looking for, but what about putting your browse button in an HTML taskpane? This implementation would be incredibly easier, but not nearly as elegant.
