I'm having a hard time understanding the scenario/issue. Would you mind rephrasing your question? If you think it will help, you can attach a template or screenshots via the Options tab when replying. Thanks.

People Picker is pretty limited. It's no wonder that people turn to third party tools or complex methods; you have to work around the restrictions in People Picker. I wrote a blog post a few weeks ago. I think the easiest alternative might be to use SharePoint’s UserProfileService to obtain the user’s info.

If you go to Default Values, you can enter as many rows as you'd like to display initially for your repeating table. Screenshot attached.

I think there is a simpler way to get a unique key. How about concat(username, " - ", now())? It's pretty difficult for the same user to submit two forms within the same second, so I think this should be unique, and you wouldn't need to resort to custom code to generate a more complex random number or a GUID.

Can you use a rule instead of a default value? The rule can have a condition (such as "if the field is blank") and this condition can be tweaker such that the rule does not run infinitely, only executing once.

InfoPath, in my experience, is usually bad in that scenario. Sure, it will switch the view, then save and then the email fails to send out the correct view. I don't think you're doing anything wrong.
I would suggest opting for a workaround, though. Instead of using multiple views, use one view with multiple sections. Hide and show these ...

Hi Catharine-

Clicking the yellow bar or doing Infopath /cache clearall SHOULD have worked, but it is possible that there was ...
