You manage access security on list basis in the given site or area:
Manage settings ... > General settings > Change permissions ... > add/remove the roles you want
Remember that item level security isnt available in Sharepoint (yet!)

1) If all data is enterd manually-then the data remains on the form after a Submit
2) Any fields that have been programmatically set default to a blank field afte pressing Submit.

I have created a InfoPath and publish it in the SharePoint Portal. But the Form should be only fill out by administrator.
But In my case, If I publish it in the SharePoint..Reader can also use that. Can you please help me How can I set the permission for that InfoPath.
