Were you ever able to get VSTA working with InfoPath 2007? I am experiencing the same problem that you had on both of my development boxes.
I have tried repairing InfoPath (Office 2007), and also tried uninstalling and re-installing .Net Programmability to no avail. I would really like to get this working, but I'm at a dead end...
