Can you Append multiple dynamic string variables to one multi text field?

I have a workflow that looks for different status updates and other changes from different people at different times as the workflow progresses.

Is it possible to append multiple dynamic string variables to one multi text field, within the InfoPath form, during a SPD workflow?

I am trying to create a history log of some sort so that people that track the workflows progess can see what has already happened and where the workflow is.

I currently have my workflow creating a new item to a list in sp but I don't like that each time it writes a log, it is a new item. I would rather it write to one multi text field ideally to the InfoPath form itself or to a list library.

I have search around the web for days but can not find any help on this issue.
