This is a limitation of Forms Services.

Scott Roberts and Hagen Green explain on page 950 of their book: "The [Submitted by ...] introduction cann be removed or modified. It is always sent with e-mails originating from a form being filled out in the browser. The decision behind this design is to mitigate anonymous spamming or relaying of e-mail through Forms Services."

Hope that helps.

Submit to Email Configuration

Hi,
I am using SharePoint 2007 with InfoPath 2007. I have designed a simple form that once filled is sent as a notification email to users. On the form there is a “Send” control that is configured to submit to “Email Data Connection”. The form is browser enabled. So far so good. ..
Issue I have is that when the email is sent it identifies the user that sends it in the email body - [Submitted by UserName]. I will appreciate suggestions on how to remove it from the email?
Thanks,
David
