Having trouble updating to new version of a form in a SP library

Hello Everyone,

I have a full trust form in a library. When I make changes to the template, I should be able to publish those up, add the content type to the library settings, make it the default content type, and then have the existing form documents that are already in the library start using the new form, even though they have existing infomation, correct? I keep having to add new versions of the content type as the existing documents want the form they were created in. Sorry if this a basic one, but I seem to have missed something here.
