Since you cannot directly manipulate values at the drop-down field properties, a workaround you can attempt to perform is to use a different field which is populated by a substring value triggered by a rule which runs on form load. Also, if you are worried of the drop-down display values being lengthy, you may want to use another field which displays these depending on which ever value is chosen. Hope this helps.

Format a data sourced dropdown value

I have a drop down linked to a secondary data source which is a sharepoint list date column. Unfortunately the date arrives in the format of 2014-01-23T09:30 which my users find confusing to read. I have the ability to substring convert the date and time to a "normal" date and time but what I can't wrap my head around is how to convert the date in the drop down field. Once the secondary source delivers the value to the drop down list I don't see in properties a way for me to capture the value convert it, then display it in the drop down as a converted value.

It has to be a dropdown because this field is a cascade, first they select the course name (ex. CPR TRAINING) then the 2nd drop down value fills with available dates for users to take the course and generally there are two or more dates to choose, its the second drop down where I want to convert the date inside the drop down.

I also can't concatenate CPR TRAINING and all AvailableDates together into one drop down value because the drop down would be so long it would be unwieldy to use.
