I've not run into this issue before. Perhaps try downloading the InfoPath form from the SharePoint library to edit it, to make sure you have the copy with the properties promoted? Each time i edit the form in infopath, i have to add the columns each time, under form options "Property Promotion" before publishing to SP. Thank you!
