In our experience we have found digitial signatures hard to work with - yes you can do it and it is support in InfoPath but as you have found it is time consuming and once you get them setup you have long term maintanence and renewal of the certificates themselves.

You might want to consider looking at product that we came up with to help ease the pain - it's not a true digital signature solution but it may well be more than enough for what you are trying to accomplish, the tool is called "Electronic Signature" and it's an InfoPath template part you insert into your form. Users then sign the form by inputting a personal pin which when authenticated pulls in a signature image from a SharePoint library.

http://www.qdabra.com/en/products/ElectronicSignature.aspx

Might be worth a look

The issue that I am having is that my digital signatures are massive and are pushing the form to two pages. I have seen digital signatures that have only the signature line itself and the date on it but I cannot figure out how to customize the information that shows up when a form is signed. Does anyone have a link to a tutorial on digital signatures and how to customize the information shown on the signature line?
