It may have a filter set that hides the other items. Or, it may be set to only show the first XX. By default SharePoint limits the list to 200 unless you extend it. Not sure which version of SharePoint you are using, but you should be able to find the link to customize the library settings. The views will be available there. Click on the default view if you are unsure which one it is and verify that there is no filtering happening. If there is no filtering, you will need to look at the form that is being submitted. Perhaps there is a problem with it.
