One will usually kick things off so I set it to commence when an item is created, then the others commence when an item is changed. I use both; InfoPath to create the Form and SP Designer to create the workflows. Depending on what your goal is you may only need to create one workflow but place wait statements or pauses into the statements. I use multiple workflows when I need it to loop around. For example if I am sending something for approval/disapproval, if it gets disapproved I need it to return to the requester for change then the requester can re-submit. Yes this is possible, I have several list/libraries that do this. One will usually kick things off so I set it to commence when an item is created, then the others commence when an item is changed.
