Hi,

I need to implement an SLA system using InfoPath browser-form. Basically I'm building a simple Helpdesk system driven by data stored in SharePoint lists.

So based on a predefined Priority an SLA in days would be assigned to a form and if it breaches this SLA then it should be escalated via Workflow.

 Anyone built anything similar before?

This sounds like a pretty basic workflow scenario.  There are a few out of box approval workflows that might be useful for you to at least start as a base and then expand on it as needed for your scenario.
