Is there a way to copy the fields out of Infopath to another Infopath form? Every time I do a Ctrl + A it copies the entire form, but none of the fields, so I basically have to recreate all the bindings for the drop down menus.

Nope. You have to rebind the fields. You could create a "starter form" that includes common fields and reuse it over and over again. That's a best practice.

Another approach is to export the source files, but the view and the data source (schema) are in separate locations and you would need to also copy sections from the manifest.xsf.

Rebinding, on the other hand, does not take that much time. :)
