Replacing Excel opinions wanted: Auditing, Overwritable calc fields and Generic Web service

Hoping someone can spend a couple minutes to answer my questions

Looking at replacing old systems and Excel with Info Path.  I have had a play and I have a few before attempting to go furthur down this Path. Not looking for full answers just peopels ideas or opinions (good and bad)

    1) Anyway of auditing all users changes made in the form.  Example: After from has gone through 4 seperate users via workflow, can the final user see the initial value and each users value if they have changed it?  Can you have a tab that list all the changes made?

    2) Prefix this question with a statement.  Users are used to excel.  So when they want to override a calulated value they firstly must know a password to unlock sheet and then the just type over the top and then put a comment on that cell. This is rare but it can happen on half the fields in the form and we don't want to start cluttering the Forms up with extra fields.  Can it be done using the same control or do we have to delve into the conditional layouts or some other approach.

    3) I've seen how easy the Table binding works but I'm wondering how easy it would be to use data from a Generic web service.  All our data comes from one web service call with 2 fields Data_Name, Data_value.  We have to move through each record and somehow map that field to a control on the form.  Would this be easy to do? should I somehow translate it into a local datatable and then use databinding?

As you can tell I want to move to a central standard for validated data but I need to justify writing code in InfoPath vs Excel. Trying to avoid Visual studio because it limits my support teams ability to sort through issues.
