i cant seem to publish infopath forms to designated folders within a single infopath form library. what i want is a central library for all infopath forms and have them segregated/published to folders within this library.

publishing to a folder seems to then have the last one published in ALL folders within that library.

i can only seem to publish to a separate library for each different form. i cant see where the option is to choose a folder.

how can this be done ? 

You have to publish your form template as an administrator approved form, in the sharepoint central administrator. Then the form is available as a content type. Now you can add mulitiple content types to your form library and maintain all forms in a sngle library.
