The cc field can be bound to a field in the form. So you can modify the receipients of the email cc this way. I don't believe there is a way to add attachments to the email (perhaps there is a code solution for this?). You can however have an attachment control in your InfoPath form and have users attach their files to the form using this so that it will be sent in the form along with the email. Hope this helps!
