In our environment, I have created a form that allows the person filling out the form to add a "start date".  Up to now it's been effective, then someone added a new form with a post-dated record, and the start date is in January 2012.  Is there a way for SharePoint to automatically send an update notice saying that the record needs to be reviewed on a certain date?  If I want to post-date any activity on this record, could SharePoint remind me, for instance, two days before the form is due?

Sounds like what you need are workflows.  Here is a good place to start:
