My form is up and live within the organisation and i have just met with the owner of the form who asked if once the forms are finally approved by clicking the approve button can certain parts of the form be sent to an excel spreadsheet?

Monitoring part where we ask for the applicants gender, ethnic origin, relion etc - can i send just these few fields to a excel spreadsheet so we can record and analyse this? at the moment the form is just being submitted to a sharepoint list and once approved is moved to a completed forms library - i was just wondering can i easily add some sort of data connection after the submit connection that will send parts to excel?
