I've created an absense request form for my work, pretty plain and simple, but they are now asking me to see if I can get it to put the date (s) they are entering in the absense request to link to an appointment in outlook.

Do you have SharePoint?

If you have SharePoint you could submit this form to a SharePoint calendar list using either custom code or qRules (http://www.qdabra.com/en/products/qRules.aspx) and then users can connect their outlook to the SharePont list (In SharePoint you there is a button in the list to connect to your Outlook).  Then that would show up as a seperate calendar in Outlook.
