I have published a infopath document to a sharepoint library, everything works great.

How do create a document in code. not using sharepoint NEW button.

I was able to upload a file using SPFileCollection.add().. I included the xml from the document library, but when I try to open the file it opens in a webbrowser and shows the xml.
I want it to open in infopath.

I must be forgetting something.

You'll need to add the processing instructions to your XML that you generate in code. Compare the XML from a document created by your template to the XML you are generating by opening both with a text editor like notepad. You'll see processing instructions at the beginning of the IP generated XML. This blog post has some additional information that may help you as well.
