Automatically extracting latest status off Infopath submitted forms into sharepoint Database

Hello, hopefully you can help me.

I am creating an issues sharepoint database using infopath forms submitted via email. The forms will have multiple fields, one of which will contain the latest status of the particluar issue that the form was created for and tracked with.  I want to be able to have a process where, on a weekly basis, the latest status published of all issues is captured and emailed, along with the description of the issue and some other static fields.  There are a few other details that I consider important but for now I need to know if the above is at all possible to a newbie like me on infopath and sharepoint.  I have been able to find that sharepoint has workflows to send periodic emails but not to extract specific data fields...

    Can anyone help? Thanks.

If you promote the status field's value to the form library where you submit the form, it would be available to you in your workflow.
