I have a client who wants to add a column (field) to the Version History View. Anyone know of a way to do this? Even if it requires creating a web page part or something? Or anyway to show all versions in a standard view?

You can add one new field to you schema. For every time submitting or save the form you have to update that newly added field value by one. You can use this field as promoted list in form and this value will be displayed in SharePoint.
