I have created a form that uses People Picker from a SharePoint Site.

When the person is picked the display is Dimitrio P Adrian.

How can I change this to Adrian P Dimitrio

I cannot change or add an entry in the Database.

If possible could this be done in non code

 Unfortunately you can't change the display of a people picker.  However you can include a calculated value field that will display the name in the correct order. Just use something like the following formula as the default value for the calculated value: 

concat(substring-after(substring-after(DisplayName," ")," "), " ", substring-before(substring-after(DisplayName," ")," "), " ", substring-before(DisplayName," "))
