After entering data into, for example, a textbox but without checking what has been entered, the user moves onto another textbox or dropdown menu, etc. Then after proof-reading, they notice that they can't edit the textbox that has the incorrect data in...

Is there a way to having this changed in design mode at all so users can go back and edit the form? Or is InfoPath designed to not allow that?

You need to add data validation on the text box which helps you out to validate the text entered in the text box immidiately after you click the cursor out side the text box.
