On the form, I have a pull down menu named ServiceType:

VALUE                  DISPLAY NAME                DEFAULT 

Select                    Select...                              Yes
In Office                 In Office
Telecommuter       Telecommuter
Vendor                   Vendor

Lets say I select Vendor then submit the form... When I open the submitted form, notice the ServiceType field goes back to Select...

Have you set the field to post-back if it's a browser form? You also might want to try deleting the control and re-adding to the view to see if it resolves your issue.
