If you are publishing a new infopath 2007 form it does seem that you can publish as many fields as you wish, i have forms with several hundred promoted fields, though displaying them in one view is not a good idea.

In infopath 2007 you could also choose the tick box option to show only unique values in the dropdown box properties, no filters required.

It should be possible to delete a form in workflow, so you could submit the form to one or more libraries and then have the workflow delete the form either on a timed event or on a change in the form.
