I need to understand if it is possible to do what I want to do.

Summary
Once a form template has been published in a sharepoint library and items have been created by entering data, I would like to reopen an existing item and enter new data. However, I still want to keep the data previously entered for the same item, and view the history (past data using data connection- retrieve).

Problem
If I reenter the data for the same item, it will will either create a new item or update the existing item depending on if I let it overwrite or not. Has anyone solved this problem? if so How?

I do not have access to Infopath 2007 (under which you posted your question) but I believe it is the same as in Infopath 2010

There is an option of enabling  versioning (version history) for a document library

• in browser navigate to a Library > on ribbon click Library tab under Library Tools > Library Settings > Versioning Settings > Document Version History > Create a version each time you edit a file in this document library?

• No versioning (by default)
• Creatу major versions
• Create major and minor (draft) versioning
  

So, after enabling versioning for a document library, you should see Vesion History option in a context menu of an item

not what I was thinking.
